Ingredients

  • 1 package of cheese tortellini (16 oz)
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of fresh basil, chopped
  • 2 tablespoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.

  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, basil, olive oil, and balsamic vinegar. Toss well to coat everything evenly.

  3. Season with salt and pepper to taste.

  4. Garnish with grated Parmesan cheese.

  5. Serve immediately.
