How To Make Vegan Sour Cream

- 1 cup raw cashews, soaked in water for at least 4 hours
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon white miso paste
- 1/4 teaspoon salt
- 1/4 cup water
Instructions

Drain and rinse the soaked cashews.

In a blender or food processor, combine the soaked cashews, lemon juice, apple cider vinegar, miso paste, salt, and water.

Blend until smooth and creamy, adding more water if needed to achieve desired consistency.

Taste and adjust seasoning, adding more lemon juice or salt if desired.

Transfer the vegan sour cream to a jar or container and refrigerate for at least 1 hour before serving.
