How To Make Vegan Pecan Pie

Ingredients

  • 1 cup of pecans
  • 1 cup of maple syrup
  • 1/2 cup of coconut milk
  • 1/4 cup of cornstarch
  • 1/4 cup of coconut oil, melted
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • 1 vegan pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, whisk together the maple syrup, coconut milk, cornstarch, melted coconut oil, vanilla extract, cinnamon, and salt until well combined.

  3. Stir in the pecans until evenly coated with the filling mixture.

  4. Pour the pecan filling into the vegan pie crust, spreading it out evenly.

  5. Bake in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden brown.

  6. Allow the pie to cool for at least 30 minutes before serving. It can also be refrigerated for a few hours to set further.
