How To Make Oregano and Zucchini Noodle Stir-Fry

A delicious and healthy stir-fry dish made with zucchini noodles and flavored with oregano.

Ingredients

  • 4 medium zucchinis, spiralized
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 scallions, sliced
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a wok or large frying pan over medium-high heat.

  2. Add garlic and cook for 1 minute.

  3. Add zucchini noodles, oregano, salt, and black pepper. Stir-fry for 3-5 minutes until noodles are cooked but still firm.

  4. In a small bowl, whisk together soy sauce and honey. Pour over noodles and toss to coat.

  5. Garnish with scallions and fresh parsley before serving.
