How To Make Vegan Lasagne

Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Ingredients

  • 9 lasagne noodles
  • 2 cups marinara sauce
  • 1 cup diced tomatoes
  • 1 cup chopped spinach
  • 1 cup sliced mushrooms
  • 1 cup diced zucchini
  • 1 cup diced yellow squash
  • 1 cup chopped red bell pepper
  • 1 cup diced onion
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups vegan mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cook the lasagne noodles according to the package instructions, then drain and set aside.

  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, and cook until the onion is translucent.

  4. Add the sliced mushrooms, diced zucchini, diced yellow squash, and chopped red bell pepper to the skillet. Cook until the vegetables are tender.

  5. Stir in the diced tomatoes, chopped spinach, dried oregano, dried basil, salt, and black pepper. Cook for an additional 2-3 minutes.

  6. In a 9×13 inch baking dish, spread a thin layer of marinara sauce. Add a layer of lasagne noodles, followed by a layer of the vegetable mixture. Sprinkle with vegan mozzarella cheese. Repeat the layers until all ingredients are used, ending with a layer of marinara sauce and vegan mozzarella cheese on top.

  7. Cover the baking dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbling.

  8. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil leaves.
