How To Make Whole 30 Zucchini Noodles with Pesto Recipe

Ingredients

  • 4 large zucchinis, spiralized
  • 1 1/2 cups packed fresh basil leaves
  • 1/2 cup raw pine nuts
  • 1/2 cup extra-virgin olive oil
  • 2 cloves garlic
  • 1/4 tsp sea salt
  • Juice of 1/2 lemon
  • Optional: 1/4 cup nutritional yeast for a cheesy flavor

Instructions

  1. Place spiralized zucchini into a large bowl and set aside.

  2. Combine all remaining ingredients in a food processor or blender and blend until smooth to make the pesto sauce.

  3. Pour the sauce over the zucchini noodles and toss to coat evenly.

  4. Optional: Heat a large skillet over medium heat, add the zucchini noodles and cook for 2-3 minutes or until just tender.

  5. Serve hot and enjoy!
