How To Make Smoked Aubergine Purée

Ingredients
- 2 large aubergines
- 2 cloves of garlic, minced
- 2 tablespoons of lemon juice
- 2 tablespoons of tahini
- 2 tablespoons of extra virgin olive oil
- 1/2 teaspoon of smoked paprika
- Salt and pepper to taste
Instructions

Preheat your grill or stovetop burner to high heat.

Place the aubergines directly on the grill or over the flame and let them cook, turning occasionally, until the skin is charred and the flesh is soft.

Remove the aubergines from the heat and let them cool slightly. Peel off the charred skin and discard.

In a food processor or blender, combine the peeled aubergines, minced garlic, lemon juice, tahini, olive oil, smoked paprika, salt, and pepper.

Blend until smooth and creamy. Taste and adjust seasonings if needed.

Transfer the smoked aubergine purée to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of smoked paprika.
