  • 3 chipotle peppers in adobo sauce
  • 1 can (14 oz) diced tomatoes
  • 1/2 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a blender or food processor, combine the chipotle peppers, diced tomatoes, red onion, garlic, lime juice, and cilantro. Blend until smooth.

  2. Transfer the mixture to a saucepan over medium heat. Simmer for 10 minutes, stirring occasionally.

  3. Season with salt and pepper to taste.

  4. Remove from heat and let cool to room temperature before serving.
