Ingredients

  • 4 large baking potatoes
  • 4 strips bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped scallions
  • 1/2 cup sour cream
  • 2 tbsp butter
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.

  2. Scrub potatoes clean and prick with a fork.

  3. Bake potatoes for 1 hour or until tender.

  4. Remove from oven and let cool slightly.

  5. Slice off the top third of each potato and scoop out the insides into a bowl.

  6. Mash the potato with butter, salt, and pepper.

  7. Fill each potato skin with the mashed potato mixture.

  8. Top each potato with cheese, bacon, and scallions.

  9. Return to the oven and bake for an additional 10-15 minutes until cheese is melted.

  10. Top each potato with a dollop of sour cream before serving.
