Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 parsnips, peeled and sliced into rounds
  • 2 large carrots, peeled and sliced into rounds
  • 1 red onion, cut into wedges
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large bowl, toss all vegetables together with garlic, olive oil, thyme, and salt and pepper.

  3. Spread vegetables in a single layer on a baking tray and roast for 30-40 minutes, or until tender and golden brown.

  4. Serve hot and enjoy!
