How To Make Rice & Peas
A flavorful and comforting dish made with rice and kidney beans, seasoned with aromatic herbs and spices.
Serves:
Ingredients
- 1 cup of long grain white rice
- 1 cup of cooked kidney beans
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 sprig of thyme
- 1 scallion, chopped
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried thyme
- 2 cups of coconut milk
- 2 cups of water
Instructions

In a large pot, sauté the onion, garlic, and scallion until translucent.

Add the rice, kidney beans, thyme sprig, salt, black pepper, and dried thyme.

Stir in the coconut milk and water.

Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

Remove the thyme sprig before serving.

Fluff the rice with a fork before serving.
