Ingredients

  • 1 kg pork belly, skin on
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 thumbsized ginger, sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons dark soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 cup water
  • 4-5 pickled chillies, sliced (for garnish)

Instructions

  1. Score the pork belly skin and cut into bite-sized pieces.

  2. Heat vegetable oil in a large pan and add garlic and ginger. Fry until fragrant.

  3. Add the pork belly and brown on all sides.

  4. In a small bowl, mix together soy sauce, dark soy sauce, rice vinegar, brown sugar, and water. Pour over the pork belly.

  5. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the pork is tender and the sauce has thickened.

  6. Serve the pork belly with steamed rice and top with sliced pickled chillies.
