Ingredients
- 1 kg pork belly, skin on
- 3 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 thumbsized ginger, sliced
- 3 tablespoons soy sauce
- 2 tablespoons dark soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 cup water
- 4-5 pickled chillies, sliced (for garnish)
Instructions

Score the pork belly skin and cut into bite-sized pieces.

Heat vegetable oil in a large pan and add garlic and ginger. Fry until fragrant.

Add the pork belly and brown on all sides.

In a small bowl, mix together soy sauce, dark soy sauce, rice vinegar, brown sugar, and water. Pour over the pork belly.

Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the pork is tender and the sauce has thickened.

Serve the pork belly with steamed rice and top with sliced pickled chillies.
