This is a healthy and delicious casserole made with ground turkey and low carb vegetables.

Ingredients
- 1 lb ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, diced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
- 1 cup mozzarella cheese, shredded
- 1/4 cup chopped fresh parsley
Instructions

Preheat oven to 375°F.

Heat olive oil in a large skillet over medium-high heat.

Add onion and garlic and cook until onion is translucent.

Add ground turkey and cook until browned.

Add zucchini, yellow squash, and red bell pepper.

Season with dried oregano, dried basil, salt, and pepper.

Transfer the mixture to a casserole dish and sprinkle with both types of cheese.
