- 1 lb. large shrimp, peeled and deveined
- 2 tbsp. olive oil
- 2 cloves garlic, minced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper, to taste
- 8 corn tortillas, warmed
- 2 cups coleslaw mix
- 1/4 cup mayonnaise
- 2 tbsp. apple cider vinegar

Heat olive oil in a large skillet over medium-high heat. Add garlic and cook until fragrant.
