Ingredients

  • 1 lb. large shrimp, peeled and deveined
  • 2 tbsp. olive oil
  • 2 cloves garlic, minced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste
  • 8 corn tortillas, warmed
  • 2 cups coleslaw mix
  • 1/4 cup mayonnaise
  • 2 tbsp. apple cider vinegar

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add garlic and cook until fragrant.

  2. Add shrimp to skillet and cook until pink. Stir in cilantro, lime juice, salt, and pepper.

  3. To make the slaw, mix coleslaw, mayonnaise, and apple cider vinegar.

  4. Assemble tacos by dividing shrimp mixture between tortillas and topping with slaw.
