Ingredients

  • 2 ripe bananas
  • 1 1/2 cups of low-fat milk
  • 3 tbsp of cornstarch
  • 1/4 cup of honey
  • 1 tsp of vanilla extract
  • 1/4 tsp of ground cinnamon
  • Salt to taste
  • 10 vanilla wafer cookies

Instructions

  1. In a saucepan, mash the bananas until smooth.

  2. In a separate bowl, whisk together the milk, cornstarch, honey, vanilla extract, cinnamon, and salt.

  3. Add the milk mixture to the saucepan with the mashed bananas.

  4. Cook over medium heat, stirring constantly, until the mixture thickens.

  5. Remove from heat and let cool for a few minutes.

  6. In individual serving dishes, layer the banana pudding mixture and vanilla wafer cookies.

  7. Cover with plastic wrap and chill in the refrigerator for at least 2 hours before serving.
