  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 small head cabbage, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.

  2. Add onion and garlic, and sauté until softened.

  3. Add chicken broth, cabbage, carrots, celery, tomato paste, paprika, thyme, salt and pepper.

  4. Bring to a boil, then reduce heat and let simmer for 20-25 minutes.

  5. Serve hot and enjoy!
