Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. In a mixing bowl, mash the ripe bananas until smooth. Add the eggs, Greek yogurt, honey, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.

  4. Gradually add the dry ingredients to the banana mixture and stir until just combined. Fold in the chopped walnuts, if desired.

  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
