  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 1 cup cherry tomatoes, halved
  • 1/4 cup freshly chopped parsley

Instructions

  1. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, and cover. Cook for 15 minutes or until all the water is absorbed. Fluff the quinoa with a fork and set aside.

  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with garlic powder, paprika, salt, and black pepper. Cook the chicken for 6-8 minutes per side, or until cooked through. Remove from skillet and let it rest for a few minutes before slicing.

  3. In the same skillet, add the diced bell peppers, zucchini, and cherry tomatoes. Cook for 5 minutes or until vegetables are tender.

  4. Add the cooked quinoa to the skillet with the vegetables and mix well. Cook for an additional 2-3 minutes to heat everything through.

  5. Serve the quinoa and vegetable mixture on a plate, topped with sliced chicken breasts. Garnish with freshly chopped parsley.
