How To Make Fluffy Japanese Pancakes
These pancakes are light, fluffy, and oh-so-delicious!

Ingredients
- 2 eggs
- 1/2 cup all-purpose flour
- 1/4 cup milk
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- Butter for cooking
- Maple syrup for serving
Instructions

Separate the egg whites and yolks into two bowls.

In the bowl with egg yolks, add flour, milk, sugar, baking powder, and vanilla extract. Mix until smooth.

In the other bowl, whisk the egg whites until stiff peaks form.

Gently fold the egg whites into the batter until well combined.

Heat a non-stick pan or griddle over low heat. Add a pat of butter and let it melt.

Pour 1/4 cup of batter onto the pan and gently spread it into a circle.

Cook for about 3-4 minutes until the edges start to set and bubbles form on the surface.

Carefully flip the pancake and cook for an additional 2-3 minutes until golden brown.

Repeat with the remaining batter, adding more butter to the pan as needed.

Serve the fluffy pancakes hot with maple syrup.
