Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/4 cup crushed peppermint candies
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.

  3. In a separate large bowl, mix together the sugar, oil, milk, vanilla extract, and peppermint extract until well combined.

  4. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

  5. On a lightly floured surface, roll out the dough into a rectangle about 1/4 inch thick.

  6. Sprinkle the crushed peppermint candies evenly over the dough.

  7. Starting from one long edge, tightly roll up the dough into a log.

  8. Cut the log into mini rolls, about 1 inch thick, and place them on the prepared baking sheet.

  9. Bake for 12-15 minutes, or until the rolls are slightly firm to the touch.

  10. Allow the mini rolls to cool on a wire rack before dusting with powdered sugar.

  11. Serve and enjoy!
