Instructions

  1. In a large mixing bowl, whisk together eggs until well blended.

  2. Stir in chives and goat cheese, and season with salt and pepper to taste.

  3. Heat butter in a non-stick skillet over medium heat.

  4. Pour egg mixture into skillet and use a spatula to spread it evenly.

  5. Cook until the bottom is set and the top is slightly runny.

  6. Use a spatula to fold the omelette in half and transfer it to a serving plate.

  7. Garnish with more chives and serve hot.
