This fragrant and flavorful herb omelet is made even more special stuffed with lox made of salmon. The omelet is briny and cheesy – perfect for breakfast.

Ingredients

  • cooking spray
  • 2eggs,large
  • 1tbspchives,chopped, plus more for garnish
  • tspsalt and pepper,to taste
  • ½ozcrumbled goat cheese
  • 2slicesheirloom tomato,(thin slices)
  • 1oznova lox,sliced
  • red onion,a few slices
  • ½tbspcapers,drained
  • parsley leaves,topping

Instructions

  1. In a small bowl beat the eggs, chive, add salt and pepper.

  2. Heat a medium nonstick skillet over medium-low heat. Spray with oil and pour the eggs. Cook until they set, about 2 to 3 minutes then top with goat cheese, then transfer to a plate. Top with sliced tomato, lox, red onion, capers, parsley and chives.
