Ingredients

  • 2 cups mixed olives
  • 2 anchovy fillets, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh oregano, chopped
  • 1/4 cup extra-virgin olive oil
  • 1 tsp red pepper flakes

Instructions

  1. Drain the olives and place them in a bowl.

  2. Add the anchovy fillets, garlic, parsley, oregano, olive oil, and red pepper flakes and toss to combine.

  3. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.

  4. Serve chilled as an appetizer with crusty bread.
