Ingredients

  • 2 sweet apples, peeled and chopped
  • 2 cups rhubarb, sliced
  • 4 cups water
  • 1/4 cup honey
  • Juice of 1 lemon
  • Ice cubes, for serving
  • Fresh mint leaves, for garnish

Instructions

  1. In a large saucepan, combine the apples, rhubarb, water, honey, and lemon juice. Bring to a boil over medium heat.

  2. Reduce heat to low and simmer for 10 minutes, or until the fruits are soft and tender.

  3. Remove from heat and let the mixture cool.

  4. Once cooled, strain the mixture through a fine-mesh sieve into a pitcher.

  5. Discard the solids and refrigerate the liquid until chilled.

  6. To serve, fill glasses with ice cubes and pour the chilled mixture over the ice.

  7. Garnish with fresh mint leaves and enjoy!
