Ingredients

  • 3 cups of fresh rhubarb, chopped
  • 1 cup of white sugar
  • 1/2 cup of apple cider vinegar
  • 1/4 cup of water
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of ground ginger
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground cloves
  • 1/4 teaspoon of red pepper flakes (optional)
  • Salt, to taste

Instructions

  1. In a large saucepan, combine the rhubarb, sugar, vinegar, water, onion, garlic, ginger, cinnamon, cloves, and red pepper flakes (if using).

  2. Place the saucepan over medium heat and bring the mixture to a simmer. Cook for about 25-30 minutes, stirring occasionally, until the rhubarb is tender and the mixture has thickened.

  3. Taste and adjust the seasoning with salt, if needed. Remove from heat and let the chutney cool before serving.

  4. Serve the rhubarb chutney chilled or at room temperature. It can be stored in a sterilized jar in the refrigerator for up to 2 weeks.
