  • 4 cups sliced rhubarb
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 2 eggs, beaten

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the sliced rhubarb and granulated sugar. Mix well to coat the rhubarb in sugar.

  3. In a separate bowl, combine the flour and salt. Add the melted butter and beaten eggs. Stir until mixture is well combined and smooth.

  4. Pour the rhubarb mixture into a greased baking dish.

  5. Pour the flour mixture evenly over the rhubarb. Use a spatula to smooth the top.

  6. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the rhubarb is tender.

  7. Remove from the oven and let cool for a few minutes before serving.
