How To Make Kheer (Rice Pudding)

Ingredients

  • 1/2 cup Basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (such as almonds, pistachios)
  • 1 tablespoon raisins
  • pinch of saffron strands

Instructions

  1. Rinse the rice under cold water until water runs clear. Soak it in water for 15 minutes and then drain.

  2. In a heavy-bottomed saucepan, bring the milk to a boil. Add the drained rice and simmer on low heat, stirring occasionally.

  3. Cook until the rice is soft and the milk has thickened, about 45 minutes to 1 hour.

  4. Stir in the sugar, cardamom powder, nuts, raisins, and saffron strands. Cook for another 5 minutes.

  5. Remove from heat and let it cool slightly.

  6. Serve warm, chilled, or at room temperature. Garnish with more chopped nuts if desired.
