- 1/2 cup currants
- 1/4 cup candied orange peel
- 1/4 cup brandy
- 1/2 cup breadcrumbs
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup butter, melted
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 eggs
Instructions
-
Preheat oven to 325°F (165°C). Grease a pudding mold or a heatproof bowl.
-
In a large mixing bowl, combine the dried figs, raisins, currants, candied orange peel, and brandy. Let it soak for 10 minutes.
-
In another bowl, mix together the breadcrumbs, flour, brown sugar, melted butter, cinnamon, nutmeg, cloves, and eggs until well combined.
-
Gradually add the breadcrumb mixture to the soaked fruit mixture, stirring until evenly incorporated.
-
Pour the batter into the prepared pudding mold and cover with a lid or tightly sealed foil.
-
Place the pudding mold in a large pot or a steamer basket filled with water, making sure the water reaches halfway up the mold. Cover the pot with a lid.
-
Steam the pudding over low heat for 2 hours, adding more water as needed.
-
Remove the pudding mold from the pot and let it cool for a few minutes before removing the lid.
-
Carefully invert the mold onto a serving dish to release the pudding.
-
Serve the Figgy Christmas Pudding warm with your favorite sauce or custard.
