Creamy Rice Pudding Recipe

Orange zest, cranberries, and raisins add a sweet flavor to this dessert. It’s great for people watching their weight because it’s low in fat, but very satisfying to the tastebuds.

Ingredients

  • 4 cup low fat milk
  • 1 cup brown rice, uncooked
  • 3 strips orange zest, wide
  • 3 tbsp sugar
  • salt, pinch
  • 1 tsp vanilla extract
  • nutmeg, pinch
  • 1/2 cup cranberries, dried
  • 1/4 cup golden raisins
  • 1/4 cup pecans , toasted chopped, optional

Instructions

  1. In a heavy medium-size saucepan, bring the milk, rice, zest, sugar and salt to a boil.

  2. Reduce the heat to low. Cover and gently simmer until the rice is tender and the milk is almost absorbed, stirring occasionally, about 1-1 1/2 hours.

  3. Remove the cover and add the vanilla and nutmeg and stir to blend over low heat until the mixture is thick, about 5-10 minutes. 

  4. Remove the zest. Stir in the cranberries and raisins. 

  5. Sprinkle with chopped pecans, if desired. Serve warm for that added touch of comfort.
