Ingredients

  • 1 lb beef chuck, cut into small pieces
  • 1/2 cup flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 1/4 cup red wine
  • 1 cup frozen peas
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten

Instructions

  1. Preheat oven to 350°F.

  2. In a large bowl, mix together flour, salt, pepper, and thyme. Add beef and toss to coat.

  3. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add beef and cook until browned on all sides, about 5-7 minutes.

  4. Remove beef from pot and set aside. Add onion, garlic, carrots, and celery to the pot and cook until vegetables are soft, about 5-7 minutes.

  5. Add beef broth and red wine to the pot and stir to combine. Return beef to the pot and bring to a simmer.

  6. Cover and transfer to the oven, cooking for 2-2.5 hours, until beef is tender.

  7. Add frozen peas to the pot and stir to combine.

  8. Increase oven temperature to 400°F.

  9. Roll out puff pastry on a floured surface and cut into 4 circles to fit the top of each individual ramekin or a large pie dish.

  10. Ladle beef mixture into ramekins or pie dish and top with puff pastry circle. Brush egg wash over pastry.

  11. Bake in the oven for 15-20 minutes, until pastry is golden brown.
