Ingredients
- 4 egg whites
- 1 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp white vinegar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 cup diced watermelon
- Zest of 1 lime
- Juice of 1 lime
- Fresh mint leaves for garnish
Instructions

Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.

In a clean mixing bowl, beat the egg whites until stiff peaks form.

Gradually add in the granulated sugar, cornstarch, white vinegar, and vanilla extract. Continue to beat until the mixture becomes thick and glossy.

Spoon the meringue mixture onto the prepared baking sheet, forming a round pavlova shape.

Place the pavlova in the oven and bake for 1 hour 30 minutes, or until the outside is crisp and the inside is marshmallow-like.

Once baked, remove from the oven and let it cool completely on the baking sheet.

In a separate mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.

To assemble, gently place the pavlova on a serving plate. Top with the whipped cream, diced watermelon, lime zest, and drizzle with lime juice.

Garnish with fresh mint leaves and serve immediately.
