How To Make Coconut Cream Meringue Pie

Ingredients
- 1 pie crust
- 1 cup coconut milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 eggs, separated
- 1/2 cup sweetened shredded coconut
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 1/4 cup sugar
Instructions

Preheat the oven to 350°F (175°C).

Place the pie crust in a 9-inch pie dish and set aside.

In a saucepan, combine the coconut milk, 1/2 cup sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until thickened.

In a small bowl, lightly beat the egg yolks. Gradually whisk in 1/2 cup of the hot coconut mixture. Return the mixture to the saucepan and cook for an additional 2 minutes, stirring constantly.

Remove from heat and stir in the shredded coconut and vanilla extract. Pour the filling into the prepared pie crust.

In a mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add in the remaining 1/4 cup of sugar, beating until stiff peaks form.

Spread the meringue over the coconut filling, making sure to seal the edges of the pie crust.

Bake for 12-15 minutes, or until the meringue is golden brown. Allow the pie to cool before serving.
