Ingredients
- 1 cup shredded coconut
- 1 cup coconut milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 pre-made chocolate pie crust
- 1 cup chocolate chips
Instructions

In a saucepan, combine the shredded coconut, coconut milk, sugar, cornstarch, and salt. Cook over medium heat until thickened, stirring constantly.

Remove from heat and stir in the vanilla extract. Let the mixture cool slightly.

Pour the coconut mixture into the pre-made chocolate pie crust and spread it evenly.

In a microwave-safe bowl, melt the chocolate chips in the microwave in 30-second intervals, stirring in between, until smooth and melted.
