How To Make Butternut Squash Soup Recipe

Serves:

Ingredients

  • 1 medium sized butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups of vegetable broth
  • 1/2 cup of heavy cream
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. Spread the cubed butternut squash on a baking sheet and roast for 25 minutes.

  3. Heat some oil in a pot and sauté the onion and garlic until soft.

  4. Add the roasted butternut squash and vegetable broth, bring to a boil.

  5. Reduce heat, cover pot and simmer for 20 minutes.

  6. Blend the soup until smooth.

  7. Add heavy cream and stir.

  8. Season with salt and pepper to taste.

  9. Serve hot.
