How To Make Butternut Squash Soup Recipe
A warm and creamy soup made with roasted butternut squash, perfect for a cozy night!
Serves:
Ingredients
- 1 medium sized butternut squash, peeled and cubed
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups of vegetable broth
- 1/2 cup of heavy cream
- Salt and Pepper to taste
Instructions

Preheat oven to 375°F.

Spread the cubed butternut squash on a baking sheet and roast for 25 minutes.

Heat some oil in a pot and sauté the onion and garlic until soft.

Add the roasted butternut squash and vegetable broth, bring to a boil.

Reduce heat, cover pot and simmer for 20 minutes.

Blend the soup until smooth.

Add heavy cream and stir.

Season with salt and pepper to taste.
