  • 1 cup bran flakes
  • ½ cup low-fat milk
  • ¼ cup unsweetened applesauce
  • ¼ cup honey
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ cup fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a bowl, combine the bran flakes and milk. Let it sit for 5 minutes to soften.

  3. In a separate bowl, mix together the applesauce, honey, egg whites, and vanilla extract. Add this mixture to the bran mixture and stir well.

  4. In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and cinnamon.

  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in the blueberries.
