  • 1 cup cranberries
  • 1 tbsp orange zest
  • ½ cup freshly squeezed orange juice
  • ⅓ cup vegetable oil
  • 1 large egg

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  3. Gently fold in the cranberries and orange zest.

  4. In a separate bowl, whisk together the orange juice, vegetable oil, and egg.

  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
