Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips
  • 2 eggs
  • 1 cup milk
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.

  2. In a large bowl, whisk together the flour, cocoa powder, both sugars, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together the buttermilk, vegetable oil, vanilla extract, and eggs.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined.

  5. Stir in the chocolate chips.

  6. Divide the batter evenly among the muffin cups and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  7. While the muffins are baking, prepare the hot chocolate custard. In a small saucepan, heat the milk over medium heat until hot but not boiling.

  8. In a separate bowl, whisk together the cocoa powder and sugar. Gradually whisk in the hot milk until smooth and well combined.

  9. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens.

  10. Remove the muffins from the oven and let them cool slightly before serving with the hot chocolate custard.
