Ingredients

  • 200g dark chocolate, chopped
  • 4 eggs, separated
  • 1/4 cup sugar
  • 1/2 cup heavy cream
  • 1/4 cup pistachios, crushed

Instructions

  1. Melt the chocolate in a heatproof bowl set over simmering water. Stir until smooth and then remove from heat.

  2. In a separate bowl, whisk the egg yolks with the sugar until pale and creamy.

  3. In another bowl, whip the cream until soft peaks form.

  4. Fold the melted chocolate into the egg yolk mixture, then gently fold in the whipped cream.

  5. In a clean bowl, beat the egg whites until stiff peaks form.

  6. Gently fold the beaten egg whites into the chocolate mixture until well combined.

  7. Divide the mousse into serving glasses or bowls, and refrigerate for at least 2 hours to set.

  8. Before serving, sprinkle crushed pistachios over each mousse.
