Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (400g) crushed tomatoes
  • 4 large eggs
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and cook until softened and fragrant, about 5 minutes.

  2. Add the diced bell peppers to the skillet and cook for another 5 minutes, until they start to soften.

  3. Stir in the smoked paprika, cumin, chili powder, salt, and black pepper. Cook for 1 minute to toast the spices.

  4. Pour in the crushed tomatoes and bring to a simmer. Cook for 10-15 minutes, until the sauce thickens slightly.

  5. Make small wells in the tomato sauce and carefully crack the eggs into the wells. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.

  6. Remove from heat and garnish with fresh parsley. Serve hot with crusty bread.
