How To Make Gooseberry & Vanilla Jam

- 500g fresh gooseberries
- 400g granulated sugar
- 1 vanilla pod, split
- Juice of 1 lemon
Instructions

Rinse the gooseberries and remove any stems.

In a large saucepan, combine the gooseberries, sugar, vanilla pod, and lemon juice.

Cook over medium heat, stirring occasionally, until the sugar has dissolved and the gooseberries begin to release their juices.

Reduce the heat to low and simmer gently for 30-40 minutes, or until the jam thickens and reaches the desired consistency.

Remove the vanilla pod and discard.

Transfer the jam to sterilized jars and seal immediately.

Allow the jam to cool completely before storing in a cool, dark place.
