How To Make Frozen Vanilla Custard

Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 vanilla bean, split and seeds scraped
- 6 large egg yolks
- 1 tsp vanilla extract
Instructions

In a medium saucepan, heat the cream, milk, sugar, vanilla bean, and seeds over medium heat until it begins to steam. Do not boil.

In a separate bowl, whisk the egg yolks until pale and fluffy.

Slowly pour the hot cream mixture into the egg yolks while whisking constantly.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.

Remove from heat and stir in the vanilla extract. Strain the custard through a fine mesh sieve into a bowl.

Place the bowl in an ice bath and stir the custard until it cools to room temperature.

Cover and refrigerate for at least 4 hours or overnight.

Once chilled, transfer the custard to an ice cream maker and churn according to the manufacturer’s instructions.

Transfer the churned custard to an airtight container and freeze for at least 2 hours before serving.
