How To Make Quick Summer Compote

- 2 cups of mixed summer fruits (such as berries, peaches, and mangoes)
- 1/4 cup of sugar
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract
Instructions

Wash and prepare the fruits. Cut larger fruits into bite-sized pieces.

In a medium saucepan, combine the fruits, sugar, lemon juice, and vanilla extract.

Cook over medium heat, stirring occasionally, until the fruits are soft and the mixture thickens slightly, about 15-20 minutes.

Remove from heat and let it cool for a few minutes.

Serve the compote warm or chilled, either on its own or as a topping for ice cream, yogurt, or pancakes.
