Ingredients

  • 1 cup of almond flour
  • 2 tbsp of coconut oil
  • 2 tbsp of maple syrup
  • 1/4 tsp of salt
  • 3 eggs
  • 1/2 cup of fresh lemon juice
  • 1 tsp of lemon zest
  • 1/4 cup of honey

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the almond flour, coconut oil, maple syrup, and salt. Mix until well combined and press into a tart pan.

  3. Bake the crust for 10 minutes, then remove from the oven and set aside.

  4. In a separate bowl, whisk together the eggs, lemon juice, lemon zest, and honey until well combined.

  5. Pour the lemon mixture into the pre-baked crust and spread evenly.

  6. Bake the tart for 20 minutes or until the filling is set.

  7. Allow the tart to cool for at least 30 minutes before serving.

  8. Serve chilled and enjoy!
