Ingredients

  • 2 tbsp olive oil
  • 4 large onions, thinly sliced
  • 4 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1/4 cup balsamic vinegar
  • 6 cups low-sodium beef broth
  • 4 slices of whole wheat baguette
  • 1 cup grated Gruyere cheese
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and cook until caramelized, about 30 minutes.

  2. Stir in the garlic, thyme, and balsamic vinegar. Cook for 2 minutes.

  3. Pour in the beef broth and bring to a simmer. Cook for 45 minutes, then season with salt and pepper.

  4. Preheat the broiler. Ladle the soup into oven-safe bowls and top each with a slice of baguette and a sprinkle of Gruyere cheese.

  5. Place the bowls under the broiler until the cheese is melted and bubbly, about 2 minutes.

  6. Serve hot.
