- 2 tbsp olive oil
- 4 large onions, thinly sliced
- 4 cloves of garlic, minced
- 1 tsp dried thyme
- 1/4 cup balsamic vinegar
- 6 cups low-sodium beef broth
- 4 slices of whole wheat baguette
- 1 cup grated Gruyere cheese
- Salt and pepper to taste

Heat the olive oil in a large pot over medium heat. Add the onions and cook until caramelized, about 30 minutes.

Stir in the garlic, thyme, and balsamic vinegar. Cook for 2 minutes.
