Ingredients

  • 1 banana squash, peeled and sliced
  • Juice of 1 orange
  • Juice of 1 lemon
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Place the banana squash slices in a baking dish.

  3. In a small bowl, whisk together the orange juice, lemon juice, honey, olive oil, salt, and pepper.

  4. Pour the citrus glaze over the banana squash slices, making sure they are evenly coated.

  5. Bake in the preheated oven for 30 minutes or until the squash is tender and golden.

  6. Remove from the oven and garnish with fresh parsley.

  7. Serve hot as a side dish.
