  • 2 medium acorn squash, sliced into 1/2 inch thick wedges
  • 2 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Cut squash in half lengthwise. Remove seeds and slice into wedges.
  3. Place the squash in a single layer on a baking sheet lined with parchment paper.
  4. Drizzle olive oil over the squash and season with salt and pepper.
  5. Roast for 20-25 minutes, turning once halfway through.
  6. Mix together the maple syrup, cinnamon, and nutmeg.
  7. Brush the maple syrup mixture onto the squash and return to the oven for an additional 5-10 minutes until the glaze has caramelized.
  8. Serve hot.
