Ingredients

  • 2 egg whites
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract

Instructions

  1. In a heatproof bowl, combine the egg whites, sugar, water, and cream of tartar.

  2. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.

  3. Whisk the mixture constantly for about 7 minutes or until the sugar has dissolved and the mixture is hot to the touch.

  4. Remove the bowl from the heat and transfer it to a stand mixer fitted with a whisk attachment.

  5. Beat the mixture on medium-high speed until stiff peaks form and the icing is glossy, about 5-7 minutes.

  6. Add the vanilla extract and continue to whisk until well combined.

  7. Allow the icing to cool completely before using it to frost your cakes or cupcakes.
