  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup molasses
  • 1/4 cup vegetable oil
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a medium bowl, mix together oats, flour, baking soda, salt, and cinnamon.

  3. In a separate large bowl, whisk together molasses, vegetable oil, brown sugar, granulated sugar, and egg until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  5. Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  6. Bake for 10 minutes, or until edges are golden brown and cookies are set.

  7. Remove from the oven and let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
