  • 1 cup walnuts
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a food processor, pulse the walnuts until finely ground.

  3. In a medium bowl, whisk together the ground walnuts, flour, and salt.

  4. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.

  5. Add the vanilla extract to the butter mixture and mix well.

  6. Gradually add the dry ingredient mixture to the butter mixture, mixing until well combined.

  7. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spaced about 2 inches apart.

  8. Flatten each ball slightly with the bottom of a glass.

  9. Bake for 12 minutes or until lightly golden around the edges.

  10. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
