How To Make Rock Cakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup raisins
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.

  3. Add the cold cubed butter to the dry ingredients and use your fingers or a pastry cutter to cut it into the flour until the mixture resembles coarse crumbs.

  4. Stir in the raisins.

  5. In a separate small bowl, whisk together the milk, vanilla extract, and beaten egg.

  6. Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.

  7. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them apart.

  8. Bake in the preheated oven for 12-15 minutes, or until the rock cakes are golden brown on the edges.

  9. Allow the rock cakes to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

  10. Serve and enjoy!
